what do rabbits have for afternoon tea?



carrot cake, of course!


Here's my recipe:

2 large carrots, grated
225g self-raising flour
2 tsp baking powder

dash of nutmeg
dash of ginger
zest of half an orange, grated
150g raisins
150g butter
100g soft brown sugar
1 egg


Mix the grated carrot, flour, baking powder, spices, zest and raisins in a large bowl. Melt the butter and sugar over a low heat, then add to the carrot mix. Beat the egg thoroughly, then add to the cake mix and stir well. Pour into a greased and lined baking tin, and bake at 180 degrees Celsius for 40 minutes. Leave in the tin for 10 minutes. Serve warm with a cup of tea.

That cake looks lovely - carrot cake always sounds so healthy I feel I can eat more of it, but I'm sure that's bad. I put a lemon glace icing on mine with lemon rind grated in, but at least I leave out cream cheese - but yours looks great just by itself! xx

Absolutely adorable! The pear was fabulous, too. They look terrific in the photos so I can only imagine how much better in person.
